The best pans in this category released over 75 fried eggs cooked with no fat. Pretty impressive. They also made stir fry after stir fry with no problems. Some of the cheaper made pans had the eggs stick just after 3 or 4 and had to be washed out with a scrubber to get rid of the cooked on mess. Not good!
Make sure to look at the pans too! Many claim to be 12″ skillets but the actual bottom part of the pan is only 8″ across! Also check how heavy the pan is and does the handle feel comfortable in your hand.
