Gluten Free Cookies: Decadent Chocolate Delight
A chocolate lover’s dream cookie.

 You can never have too many great cookie recipes to draw from. Of all the gluten free recipes I make and adapt, cookies have got to be my favorite. They are so handy to have on hand when you have friends and family. They are the perfect nibble with a cup of coffee at the end of the day. This recipe puts all other gluten free chocolate cookies to shame. This one is for the true choco-holic!

Gluten Free Decadent Chocolate cookies


These cookies do not look like they will bake properly. Don’t worry, they turn out great!

8 oz. bittersweet chocolate, chopped (can use semisweet chocolate chips)
2 TB butter
5 TB gluten free flour blend (I like Mina’s Purely Divine)
½ tsp baking powder
2 eggs
2/3 cup sugar
1 tsp gluten free vanilla extract
2 cups chopped nuts, dried fruit, coconut or a combination
1 ½ cups gluten free baking chips of your choice

Preheat the oven to 350 degrees.

In a saucepan, melt the bittersweet chocolate and butter. Remove from the heat and cool. Or place in a microwave safe bowl and microwave for 30 seconds, stir and microwave again stirring until melted and smooth. Prepare two baking sheets with parchment paper and set aside.
Combine the gf flour blend and baking powder in a small bowl. In a large bowl beat the eggs, sugar and vanilla together for about 5 minutes until thick. Add the flour mix followed by the melted chocolate. Gently fold in. Stir in the chopped nuts and baking chips. Immediately, scoop out the dough using a small (teaspoon) cookie scoop, dropping the dough 1” apart on the baking sheets. Bake for 8-9 minutes or until set.
Remove the parchment paper with the cookies on them to the counter and allow to cool completely. Repeat baking cookies on their own parchment sheet until the dough is used. When the cookies are completely cool, peel off the parchment and place in an airtight container using wax paper to separate the layers of cookies. Makes about 40 cookies.
