In celebration of the coming of summer these gluten free cookies are ready in 10 minutes. In the southwest, we do everything in our power NOT to turn on the oven, so this recipe can be made using your microwave.
Gluten Free Cookies – Ready in 10 minutes
1/4 cup butter or margarine
1 1/2 cups crushed gluten free cookie crumbs (sugar or shortbread would be good)
1 1/4 cups chopped peeled apples,about 2 small
1 can (14oz) sweetened condensed milk
1 1/3 cups sweetened, flaked coconut
1 cup chopped nuts (see note)
In an 11×7 microwave baking dish, melt the butter on high for 1 minute. Sprinkle the cookie crumbs over the butter and then the apples. Pour the sweetened condensed milk over the top and then spread on the coconut and nuts. Press down firmly to pack it.
Microwave on high for 8 to 9 minutes. Make sure to rotate the dish after 4minutes.
Cool in the refrigerator for 1 hour and then cut into squares. Top with whipped cream or ice cream or hot fudge sauce or caramel sauce.
Makes 12 bars.
Note: If you don’t like nuts you could add another type of dried fruit like cherries, or you could use sunflower or pumpkin seeds, or add chocolate chips(they will melt), or add some more cookie crumbs or crushed pretzels, or leftover cake or bread crumbs.
