Easy Weeknight Meal in 30 minutes.
Got 30 minutes to make something to satisfy your hungry crowd? Good, then you have enough time to put together this quick dinner.
But don’t just think of this for dinner only? Since we can’t buy those cute “Lunchables” at the store, make these and prepare your own Gluten Free “Lunchable”. Cut these into wedges and add a small container of sauce. Pop in some carrot sticks and apple slices and you’re good to go.
Pepperoni and Mushroom Pizza Quesadillas
6 gluten free flour tortillas, thawed if frozen
5 oz. package natural, uncured sliced pepperoni
8 oz. pkg fresh sliced mushrooms
8 oz. block part skim mozzarella cheese, shredded
3 Tbsp. olive oil
15.5 oz. jar all natural marinara sauce, warmed
Place the tortillas on a clean counter. On just half of each tortilla layer on pepperoni, mushrooms and cheese. Fold them in half.
Heat up 1 Tbsp. of oil in a large skillet. Place 2 quesadillas in the skillet and cook until golden brown. Flip over and cook until brown on the remaining side. Place on an oven safe plate and put in a warm oven to hold. Cook the rest of the quesadillas, using 1 Tbsp. of oil as needed until all are done.
Cut into wedges and serve with warmed marinara sauce for dipping.
Serve with a salad and Italian dressing.
