Gluten Free Granola Bars

Gluten free granola bars ready in under 30 minutes.

Whether you use homemade gluten free granola or buy some from the store, be sure to make these bars with it. Having granola bars made up ahead of time gives you a nutritious breakfast or snack.  Chock full of fruits, nuts, chia seeds, flax seeds or whatever else you want. No need to go to the store and buy them. You can save money and make your own signature bars.

Gluten Free Granola Bars
4 cups gluten free granola
1/2 cup chopped dried fruit, chia seeds, flax seeds or a combination
1/3 cup granulated sugar
1/3 cup certified gluten free oat flour
1/2 teaspoon salt
1 teaspoon vanilla extract
1/4 cup oil of your choice
1/3 cup peanut butter, optional
1/4 cup honey, maple syrup or agave syrup
1 tablespoon water

Preheat the oven to 350°F. Lightly grease a 9″ x 13″ pan.

Place the granola, sugar, oat flour and salt in a large bowl, stir together to combine. In a medium sized bowl, whisk together the vanilla, oil, honey, peanut butter, and water. Pour the wet ingredients over the dry to combine. It will be crumbly. Spread in the prepared pan pressing down to cover the bottom.

Bake the bars for 25 to 30 minutes, until they’re just starting to brown and bubble around the edges. Remove from the oven, and cool for 10 minutes. Use a knife to cut the bars while they’re still warm in the pan. Let cool completely before removing from the pan.
Makes about a dozen depending on how big you cut them.
