Take a humble zucchini and turn into a foodies delight.
Up your intake of vegetables while enjoying something sweet and satisfying. Nobody said that you couldn’t have your cake and vegetables too? Or at least I think that’s right 🙂 Let’s just go with it!
Here are the ingredients you need to make these bars:
1 cup finely shredded zucchini (I packed it in pretty well)
1 cup sugar
1/2 cup vegetable oil
1 teaspoon vanilla
1 cup white rice flour
1/2 teaspoon salt
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
Did you notice? No xanthan gum needed! Awesome!
Be sure to have these on hand for the frosting:
Butter, brown sugar, vanilla extract, powdered sugar and heavy cream.
