Here’s a great recipe for making your own Pumpkin Puree for the Pumpkin Cheesecake recipe. it’s fairly simple to do, just requires a little time in the kitchen and some patience to wait for it cook down. Fresh pumpkin puree is wonderful. Just make sure to find the smaller sized pumpkins or “pie” pumpkins as they are called. These are sweeter and the inside flesh is a lot less grainy. The bigger the pumpkin, the more grainy the flesh inside. So stick with ones that are 5 lbs. or less.

Pumpkin Purée Recipe
Homemade pumpkin purée is easy to make. The better your pumpkin (or squash), the better your pie (or pumpkin bread, etc.) will be. Smaller pie pumpkins generally have sweeter flesh, and many varieties of winter squash make excellent sweet purées.
