If it’s just the two of you ( empty nester here) making regular sized recipe just means a boatload of leftovers in the frig.
Now, I’m not knocking having leftovers. Sometimes leftovers are my best friend, but I do get tired of having a frig full of them.
So, with this in mind, we( meaning those of us here at Your Gluten Free Kitchen) have decided to start making and posting scaled down recipes.
We have lots of fun stuff up our sleeves. Dinner recipes, desserts, yummy cake recipes, breads and muffins and pies. Having a giant pie or cake once in a while is okay (especially if you really love it) but scaled down versions mean you can have more than one kind of dessert this week 🙂
Here’s our version of Orange Chicken just for the two of you.
Gluten Free Orange Chicken
Note: needs to marinate for 1 hour
1/2 cup orange juice
1 Tbsp. gluten free soy sauce ( we like San-J)
2 boneless skinless chicken breast halves
2 Tbsp. orange marmalade
In a small bowl, mix together the orange juice and the soy sauce. In a large zip type bag or glass container with a lid, place the chicken breasts. Pour over the chicken 1/4 of the orange juice mixture, seal, and refrigerate for at least one hour.
Preheat the oven to 350 degrees.
Drain and throw out the marinade. Lightly spray an 8×8 baking dish. Add the chicken and pour the reserved marinade over the chicken. Spoon the marmalade over the top of the chicken pieces.
Bake, uncovered for 25 to 30 minutes or until the juice runs clear..
