Gluten Free Cookies: Chocolate Truffles

This is hands down one of the easiest recipes for gluten free cookies you could ever make. With only 5 ingredients, it classifies for one of the shortest!

Gluten Free Cookies: Chocolate Truffles                

18 oz. of gluten free chocolate sandwich cookies with white filling
1 8oz. package cream cheese, softened
1 pound gluten free white chocolate chips
1 TB shortening
Colored sugar crystals

   

Line a baking sheet with waxed or parchment paper; set aside. Place the sandwich cookies, 1/3 at a time, into the bowl of a food processor. Finely crush and place into a large bowl as each batch is done. When all the cookies are crushed, add the softened cream cheese. Beat with an electric mixer on low until everything is well combined. Shape into 1″ balls using a small cookie scoop.

In a large saucepan or microwave safe bowl, melt the white chocolate chips and the shortening together over low heat or power until melted, cool slightly.

Dip each cookie ball into the white chocolate coating, letting the extra drip back into the bowl. Place each truffle on the paper lined baking sheet. Immediately, sprinkle with colored sugar crystals, if desired. Chill for 1 hour to firm up. Store, covered in the refrigerator for up to 1 week.

Makes about 40 truffles
