Little gems of fruity goodness. The hazelnuts give these a nice crunch and texture. Check your cupboards and use those wonderful glistening jars of jam for these adorable cookies.
Hazelnut Jam Cookie Tarts
Ingredients:
1 cup butter, softened
2/3 cup sugar
½ cup powdered sugar
2 eggs
1 ½ tsp. gluten free vanilla extract
3 cups gluten free flour blend (xanthan gum added)
1 cup ground hazelnuts
1 tsp. baking powder
½ tsp. salt
3 Tbsp. heavy whipping cream
1 ½ cups jams or preserves ( we used apricot, cherry and blackberry)
Dough needs to chill for 1-2 hours.
Directions:
Beat the butter and both sugars in a large bowl until light and fluffy, about 3 to 4 minutes. Add the eggs, one at a time, beating well after each one. Beat in the extract.
In a medium bowl, whisk together the gluten free flour blend, ground hazelnuts, baking powder and salt. Slowly add to the butter mixture, beating until combined. Beat in the cream. Add a little more if the dough does not come together.
Place in a gallon sized zip type bag, seal and refrigerate for 1 to 2 hours or overnight.
Preheat the oven to 350 degrees. Spray mini muffin pans with non-stick cooking spray and set aside.
Roll out the dough, 1/3 at a time, on a lightly floured surface or parchment paper, to ¼” thick. Cut with a square 2 ¼” cutter. Re-roll scraps until all the dough is cut.
Press gently in to the mini muffin cups using a tamping tool to gently push to the bottom. Use your fingers and press the dough against the sides.
Bake for 10 minutes to set the dough. Use the tamping tool to gently push the dough and create a thumbprint for the jam. Spoon 1 tsp. of jam into each cookie.
Bake for an additional 15 minutes or until the jam is bubbly and thick. Cool for 15 minutes in the pan and then remove to wire racks to cool completely.
These are somewhat delicate, so use a small silicone spatula to run around the outside edge of each tart. Gently push the spatula under the tart and lift out.
Makes 4 ½ dozen jam tarts.
