Gluten Free Cherry Chocolate Ice Cream

Nothing makes me happier than chocolate. Except maybe peanut butter and chocolate! 

So when you add cherry to the mix it just makes it all that more exciting (kinda like that famous ice cream made by those two guys… you know the ones).

This gluten free homemade version is full of wholesome ingredients that you can feel good about.

And what’s not to love about ice cream. Especially homemade.  All you need is an ice-cream maker.

Ingredients:

1/4 cup semi-sweet chocolate bars, shaved

1/4 cup fresh halved and pitted Bing cherries

2 large pasturized eggs *see the note

3/4 cup sugar

2 cups heavy or whipping cream

1 cup milk

Instructions:

Grab two medium sized bowls. Place the shaved chocolate flakes in one and the cherries in the other. Cover bowls and place in refrigerator.

In a large mixing bowl, whisk the eggs for 1 to 2 minutes, or until light and fluffy. Whisking in the sugar, a little at a time, continue to mix about 1 minute more, or until completely blended. Whisk in the cream and milk and stir well to blend.

Transfer the mixture into the bowl of an ice cream maker. Following the manufacturer’s instructions for freezing and adding in base ingredients. Once the ice cream gets to the right consistency, add the chocolate and the cherries.

Continue freezing as per the manufacturer’s directions.

Don’t stop with just adding chocolate and cherries. How about chopped peaches or cookies (did I hear gf cookies and cream). Have fun with this base recipe and make up your own variations.

Note:

Pasteurized eggs can be substituted in recipes that call for uncooked eggs. Commercial pasteurization of eggs is a heat process at low temperatures that destroys any Salmonella that might be present, without having a noticeable effect on flavor or nutritional content. These are available at some supermarkets for a slightly higher cost per dozen.
