Fluffy gluten free pancakes with this one trick.

Pancakes are a delicious treat in the morning.
Here are the ingredients for this recipe:
1 cup Gluten Free Flour Blend (see below)1 cup buttermilk*1 egg2 tablespoons sugar3 tablespoons butter, melted2 teaspoons gluten-free baking powder1/4 teaspoon saltButter for servingMaple syrup for serving
 If you don’t have a favorite gluten free blend that you use, there is a recipe on this site along with the directions for the pancakes.
Now, for that one secret….. Â Go ahead and mix up your batter as directed on the recipe. Then Wait! Â Don’t use it right away. Set it aside and let it rest for 10 to 15 minutes. Grab the butter, syrup, plates and forks while it rests.
If you rest the batter, it will rise up and allow the baking powder to do it’s job. The batter will light and fluffy and so will the pancakes. Make sure to turn them carefully so you don’t deflate them.

April 10, 2016Allowing the batter to sit also allows the flour to absorb moisture to reduce the grittiness of the flour grains. This sounds like a real winner!!!
