Farm-to-table zucchini dish.
Head out to the farmers market or get thyself to a u-pick farm or just leave the car doors unlocked next to your neighbors house where they are being flooded with summer squash ( but only do that once…unless you REALLY like summer squash :).

Zucchini pirates have struck again.
Here are the ingredients for the gratin:

2 tablespoons butter

2 medium zucchini (about 7 ounces each), sliced crosswise 1/4 inch thick

2 medium yellow squash (about 7 ounces each), sliced crosswise 1/4 inch thick

2 shallots, minced
-
2 garlic cloves, minced

Coarse salt and ground pepper

1/2 cup heavy cream
-
1 cup gluten free bread crumbs

1/2 cup grated Parmesan cheese
We didn’t say it was calorie free, but it is delicious.
