Make this roast beef sandwich with the Bavarian Pot Roast (if you made enough for leftovers). Otherwise, grab some Boar’s Head roast beef from the deli and have dinner ready in 20 minutes.
Hot Roast Beef Sandwich
Ingredients:
3 Tbsp. canned chopped green chilies
1 Tbsp. mayonnaise
1 tsp. Dijon or regular mustard
1 gluten free baguette ( used Udi’s brand in the frozen section)
4 slices of roast beef ( leftover Bavarian Pot Roast or deli bought)
4 slices of tomato
6 to 8 spinach leaves depending on how big
2 slices of Swiss cheese ( Boar’s Head brand used)
Directions:
Preheat the oven to 400 degrees.
Mix together the green chilies, mayo and mustard. Cut the baguette into 2 or three pieces depending on how big a sandwich you want.
Spread the chili mayo mixture on the inside of each cut side of the bread. Layer inside the beef, cheese, tomato, and spinach.
Wrap the sandwiches in foil completely. Place on a baking sheet and bake in the oven for 15 minutes or until hot and the cheese is melted and yummy.
Makes 2 sandwiches.
You can use leftover ham, chicken or turkey and swap out the beef. These are great for using leftover meat.
