Gluten free Dinner in 15 minutes

Quick cooking polenta makes this a fast fix.

 Polenta

Polenta is an Italian dish very similar to grits. It’s made with cornmeal and a liquid ( water or chicken broth or good choices). Stirred and cooked until thick and creamy. You can also stir in cheese to give more flavor.

This 30 minute or less recipe can become a staple at  your house too.
Serves 4

Here is the ingredient list:

  • Olive oil cooking spray

  • 3 3- to 4-oz sweet or hot all-natural Italian low-fat turkey sausage, casings removed and crumbled

  • 1 yellow onion, thinly sliced

  • 1 green bell pepper, thinly sliced

  • 1 red bell pepper, thinly sliced

  • 3 cups jarred all-natural marinara sauce

  • Pinch red pepper flakes

  • Sea salt and fresh ground black pepper, to taste

  • 1 cup finely ground cornmeal

  • 6 fresh basil leaves, coarsely chopped

Be sure to chose a gluten free turkey sausage. Just check the packaging to make sure. Jennie-O makes a good one and is available in a lot of stores.
