Make Your Own Self-Rising Gluten Free Flour Blend

Don’t want to use buckwheat for your pancake cravings? Need a quick gluten free flour mix for all your muffins/scones/pancakes/waffles/biscuits/anything-self-rising needs? Here’s your fix! This gluten free flour self-rising blend will work for any bread or cake not requiring yeast. Use it to make waffles in The Best Gluten Free Waffle Maker Ever or to whip up some scrumptious Peanut Butter & Jelly Pancakes!

In a large bowl whisk together the flours:

3 cups brown rice flour or white rice flour, finely ground
1 cup bean, soy flour, or sorghum flour
1 cup coconut flour or almond meal

Now the starch:

2 cups tapioca starch

And finally the other ingredients:

2 cups powdered milk*

1 tbsp. sea salt
3 tbsp. Rumford Baking Powder (No aluminum—that’s a good thing!)

*If you can’t have dairy products, go ahead and leave out the powdered milk. When you get ready to bake, instead of using water in your recipe, use almond milk or coconut milk or a blend of water and fruit juice. This takes the place of the powdered milk.

Powdered milk has a lot less fat and calories than regular liquid milk, is shelf stable and increases the protein of your flour blend. If you are not allergic, I highly recommend using it.

One more thing …. This is great to take camping with you. Just add water and voila! :) instant pancakes!
