Easy to make in your slow cooker, this takes no time at all to put together. Special spices and apple give it extra flavor. Double this recipe and use the leftovers for soup or sandwiches like our Hot Roast Beef.
Bavarian Apple Pot Roast
Ingredients:
1 boneless beef round roast ( 1 lb.)
1/2 cup unsweetened apple juice
1/4 cup tomato sauce
1 small onion, diced
1/2 Tbsp. white vinegar
1 tsp. minced fresh ginger root
1/2 tsp. salt
1/2 tsp. ground cinnamon
1 Tbsp. cornstarch or arrowroot starch ( for gravy)
1/8 cup water
Directions:
Pull out a large skillet and brown the roast on all sides. Add a little oil if you need to keep it from sticking.
Place in a 2 to 3 quart slow cooker.
In a medium sized bowl, whisk together the apple juice, tomato sauce, onion, vinegar, ginger, salt and cinnamon. Pour over the roast.
Place the lid on the slow cooker and cook on low for 6 hours.
One hour before serving:
Combine the cornstarch and the water in a small bowl until combined. Stir into the juice of the pot roast in the slow cooker. Place the lid back on and cook for another hour or until the meat is tender and the gravy is thickened.
Serve with mashed potatoes and steamed vegetables.
Makes 3 servings.
