Gluten Free Recipes: Potato Salad

If you are thinking of making my zucchini relish, here’s another of my gluten free recipes.

Summer is the time for picnics and BBQ parties outside. We enjoy getting together with my family and friends for cookouts. I always ask what I can bring and 9 times out of 10 the answer is “potato salad”.

Why? Probably because I make my potato salad with that yummy zucchini relish I shared with you. It lends a nice sweetness that goes well with the mayo and mustard dressing. Using the relish saves me time, I don’t have to chop up any pickles or onions or anything. Makes it handy.

 

Gluten Free Recipes: Potato Salad

5 lbs. potatoes, peeled and cut into chunks
7 eggs, hard boiled
1 pint of Gluten free Zucchini Relish
1 1/4 cups mayonnaise
3 Tbsp. prepared gluten free mustard
a little salt and pepper

Place the potatoes in a large pot of water just to cover. Bring to a boil and cook until the potatoes are fork tender.

Meanwhile, peel the eggs and cut into small pieces. i usually measure the mayo in a 2 cup measuring cup and then plop the mustard right on top. Then I take a spoon and mix like crazy until combined.

When the potatoes are done, drain and toss into a large bowl. Put the eggs on top, then the jar of Zucchini Relish ( you can drain a little, but the juice makes it taste pretty good). Mix with a spoon and then mix in the mayo/mustard dressing.

Sprinkle with a little salt and pepper to taste.

That’s it.

Refrigerate until ready to eat.

This is the easiest way to make great tasting potato salad.
