It’s hard to beat a comforting Italian dish such as this. Hearty, delicious and only takes minutes to get ready for the oven. Then you can do something else 😉
Simple Chicken Cacciatore Casserole
Ingredients:
4 chicken pieces, your choice, uncooked
2 cans (15 oz) Italian style diced tomatoes, I like Muir Glenn
2 jars (6 oz) sliced mushrooms, drained or 1 pkg. fresh, sliced
1 Tbsp. dry Italian seasoning mix
1 Tbsp. dried parsley
Some fresh basil leaves and black olives for garnish, if desired
Cooked rice or gluten free pasta for serving
Directions:
Preheat the oven to 350 degrees. Lightly oil a casserole dish that will fit the chicken pieces. It should be at least 2″ deep to hold the tomatoes and juice.
Place the chicken in the casserole dish. Pour the 2 cans of diced tomatoes over the top, spread them around to cover the chicken and then add the sliced mushrooms on top.
Sprinkle the dry Italian seasoning mix and the dried parsley over everything.
Cover tightly and bake in preheated oven for 1 hour (more or less depending on your choice of chicken pieces), until chicken is cooked thoroughly.
Take out of the oven and sprinkle with fresh basil leaves and black olives.
Serve with cooked rice or gluten free spaghetti. There should be plenty of sauce.
Will serve 2 to 4 (depending on what kind of chicken you choose. Drumsticks  or thighs will feed two people, chicken breasts will feed four).
Go all out and add some garlic bread or gluten free rolls spread with butter and warmed in the oven.
A nice red wine would be good too….. just sayin’.
