Make the best waffles ever.
Make a bunch of these, freeze them and then pull them out for dinner. Dinner? Yes, I said dinner!
Cover with gluten free chili and top with cheese, sour cream and chives. You could also pour over creamed chicken or sausage gravy.
Quick, easy and also friendly on the budget. You can’t go wrong these waffles.
 Gluten Free Idaho Potato Waffles
1 cup gluten free flour blend
1 tsp. baking powder
1/4 tsp. baking soda
1/2Â tsp. xanthan gum (omit if flour blend has already)
1/8 tsp. salt
1 Tbsp. sugar
1 egg
1/2cup mashed potatoes
3/4 to 1 cup water or potato water
( the water you cooked your potatoes in: you saved that right?)
1/4 cup oil of your choice
In a medium sized bowl, mix together the gluten free flour blend, baking powder, salt, and sugar. In a medium sized bowl, whisk the egg, mashed potatoes, water and oil together. Add the flour mix and whisk together. Allow to sit for 10 minutes while you heat up your waffle iron.
Pour 1/3 to ¼ cup of batter (or use your batter scoop that came with your waffle) and place in the center. Bake as per your waffle irons directions.
Makes 3 waffles
If you need more, just double all the ingredients so you end up with 6 waffles, or 9 or 12 or……
