Simple Summer Salad

Use this summer’s bounty and make a crisp salad.

Cool cucumbers, fresh warm tomatoes, a few other ingredients and you have the making of a simply delicious summer salad.

Be sure to use the freshest ingredients you can. If you don’t have your own garden, pop over to your local farmers market, or better yet, head out to the local You-Pick farm and enjoy getting out and picking your own.

Then come home and make this refreshing salad along with some grilled chicken and home made ice cream.

Here are the ingredients:

Ingredients

  • 1 pound cucumbers, (about 2 cucumbers), peeled and thinly sliced

  • 1 pint cherry tomatoes halved

  • 1/2 Vidalia onion, very thinly sliced

  • 2 tablespoons parsley sprigs, chopped fresh

  • 1 tablespoon apple cider vinegar

  • 1 tablespoon olive oil

  • salt and freshly ground black pepper, to taste
