Low Carb Cauliflower Chowder: Easy to do in the slow cooker.
Hot, and creamy with a smoky bacon flavor. Perfect for sitting by the fire on a cool night.
Cauliflower Bacon Chowder
3 slices bacon, cut up small and fried crisp
1 bag (16 oz) frozen cauliflower, thawed
1/4 cup diced onion
1 garlic clove, grated
1/2 Tbsp fresh chopped parsley
1 tsp kosher salt
1/4 tsp black pepper
1/4 tsp dried thyme
2 cans (14 oz size) gluten free chicken broth
1 pint heavy cream
Chopped parsley to garnish
Put all ingredients (EXCEPT heavy cream) in the slow cooker.
Set temperature to LOW, cover, and cook for 6 hours.
Stir in heavy cream, turn heat off slow cooker, and let sit for 5 minutes.
Sprinkle with chopped dried parsley flakes on top for serving.
Will serve 2 to 4.
You can substitute 1 fresh whole head of cauliflower. Clean well and cut into florets. Add one hour to the total cooking time.
You can also make this into a smooth bisque by blending the chowder with a stick blender right in the slow cooker. Be careful not to splash on yourself. Blend until smooth.
