Spiralizer Summer Salad in a flash

Use fresh summer vegetables and make a Mediterranean salad quickly.

This kitchen gadget has taken fresh salad making by storm. Using a spiralizer, you can quickly turn fresh vegetables into thin spiral “noodles” that are tasty and make your dishes fun.

Pulling this salad together takes no more than 15 minutes. And since no lettuce is used, it holds up well in the refrigerator or for your lunch. Take the dressing in a separate container and pour on when you’re ready to munch.

Gadgets are the go-to in my kitchen. I pick up things that make my life easier and quicker. If it saves me time and works well, I’m in.

Here are the ingredients you need for this dish:

For the Zucchini Noodles Salad:
  • 2 medium zucchini, spiralized or cut into noodles
  • 1/2 medium hothouse cucumber, sliced into half moons
  • 2 medium tomatoes, cut into small wedges
  • 1/4 medium red onion, sliced thinly into half moons
  • 1/2 cup (2.5 ounces) cubed feta cheese
  • 15 Kalamata olives, pitted and halved
For the Greek Yogurt Dressing:
  • 1/4 cup Greek yogurt

  • 1 medium garlic clove, finely minced (about 1 teaspoon minced)

  • 1 tablespoon crumbed feta cheese

  • 1 teaspoon lemon zest

  • 1 tablespoon lemon juice

  • 1 tablespoon olive oil

  • 1/2 teaspoon Sriracha hot sauce, or a few dashes of your favorite hot sauce

  • 1/2 teaspoon honey

  • 1/4 teaspoon salt, or more to taste

It takes longer to read the ingredients that it does to make the salad 🙂
