Asian Ginger Pepper Chicken Stir Fry

Now that school has begun, life just gets busier and busier. I want to put a good meal on the table for dinner, but how and when and who has time to slave over anything these days. Not me! 

So here’s to easy gluten free recipes! Time to turn to one of your handiest gadgets in your kitchen. The skillet! A large one is needed here, about a 10 or 12 inch one will work.

The directions are easy and the meal comes together quickly. If you don’t have time to cook regular rice, go ahead and use instant. I’m not telling anybody and the food police will not bang on your door. If you have guilt pangs, then use instant brown rice.

Orange Ginger Chicken with Peppers

1 tablespoon corn starch or arrowroot starch
3/4 cup water
2 tablespoons gluten free chicken bouillon
1/2 cup orange juice
2 Tbsp. sesame seeds
2 Tbsp. gluten free soy sauce
1 tsp ground ginger
1/4 tsp ground pepper
1/2 cup chopped green pepper
1/2 cup chopped red pepper ( you can use hot ones too if you want)
1/2 cup chopped onion
2 tablespoons canola oil
1 1/2 lbs. chicken tenders, cut into chunks

Equipment needed: 10 or 12″ skillet, one bowl, and a whisk

Combine the first eight (8) ingredients together in a small bowl.

In a wok or skillet, stir fry the peppers and onions in 1 tablespoon of the oil for about 5 minutes, then add the chicken and cook until no longer pink. Stir in the broth mixture and bring to a boil. Cook and stir for 2 more minutes or until thick and bubbly. Serve with hot rice.

Makes 4 servings
