Gluten Free Bars: Quick Microwave Fudge

Sometimes life can be busy, busy ,busy.  So here is a “go to” gluten free bars candy recipe you can take to any party, event or just leave on the kitchen counter and munch away.

1 1/2 cups gluten free semisweet chocolate chips
1 14 oz. can of Sweetened condensed milk (not evaporated)
2 Tbs. cold butter, cut into small squares
2 tsp. gluten free vanilla extract

Place the chocolate chips in a microwave safe bowl. Microwave on high for 1 minute. Stir well, then zap again for 30 seconds. Stir until they melt together. Take out of the microwave.

Pour in the sweetened condensed milk and stir until well mixed.

Sprinkle the butter squares over the top. Microwave another 30 to 45 seconds to melt the butter. Take the bowl out and stir the butter into the chocolate mix.

Add the vanilla and stir until combined and smooth.

Pour into a 9×5″ bread loaf pan that has been buttered or lined with parchment (I like the parchment route better).

Chill in the frig for 2 hours before cutting.

You can freeze it to give later. It will hold in the freezer for 4 weeks. Good for make ahead gifts.

Makes 2 pounds of fudge

Add 1/2 cup of walnuts or pecans for nut fudge. Or you can add 1/2 cup of walnuts or dried cranberries or cherries and stir in with the vanilla.

Have fun and flavor with raspberry or orange. Just stir in 1/8th tsp. of strong oil flavoring along with the vanilla.
