What do we crave more than anything else?
What brings people running into the kitchen saying: “Wow! That smells so good. Can I have a piece now?” What makes you stop everything you’re doing just so you can take in the aroma and sigh?
I don’t know about you, but every time I walk by a bakery, I can’t resist standing there and take in the fabulous smells. That’s the time it’s tough to be a celiac. Bread, bread, bread! We’re obsessed with it. We are constantly in pursuit of a good loaf of gluten free bread. Especially since there are so few that actually taste good and would be something you want to eat.
I’ve tasted my share of “Yuck”, that it’s almost not worth trying any more!
This is the gluten free bread that I use every day at home in my house. This is what I eat. This is what I use for grilled cheese, toast in the morning, and a sandwich in the afternoon. This is what I use to make bread pudding and croutons. This is my staff of life.
I’m going to give it to you so you can enjoy it too.
Gluten Free Bread
This is a great all purpose gluten free bread recipe. Very versatile. If you master this one recipe, you can make rolls, hamburger buns, hotdog buns and bread sticks.
Set aside a day to make numerous rolls, buns and bread for your freezer. It will save you time later in the month and still taste as fresh as when you made it!
Instructions are given for two sizes of mixers.
Kitchen Aid stand mixer directions:
Place in the bowl of your mixer:
1 package of yeast ( 2 1/4 tsp.)
3 1/4 cups of gluten free flour
2 1/2 tsp xanthum gum
1 1/2 tsp salt
1/2 cup powdered milk
3 Tb sugar
Using a whisk, combine the dry ingredients together. Place the bowl on the mixer and using the regular white paddle add:
3 eggs, beaten
1/4 cup oil
1 3/4 cup warm water
1 tsp cider vinegar
Mix for 3 minutes until well combined, dough will be very sticky. Place the bread dough into a 9×5 loaf pan sprayed with non-stick cooking spray. Let it rise until it reaches the top of the pan.
Bake in a pre heated oven 350 degrees for 40-50 minutes or until done. Use a toothpick and check the center to make sure.
For a Bosch Mixer machine or similar size:
Place in the bowl with the cookie paddles:
4 1/2 tsp yeast ( 2 packets)
6 1/2 cups gluten free flour
5 tsp xanthum gum
3 tsp salt
1 cup powdered milk
6 Tbl sugar
Mix and then add:
6 eggs
1/2 cup oil
3 1/2 cups water mixed with 2 tsp cider vinegar
Mix until combined. Do not mix for three minutes. The Bosch is too powerful. Divide the dough in two. Place it in 9×5 bread pans that have been sprayed with non-stick cooking spray.
 Let rise until it reaches the top of the pan and bake for 40 to 50 minutes or until done.Â
I use freshly ground gluten free flour in my recipes. I have also tested this using Bob’s Red Mill Gluten Free Flour Blend, Tom Sawyer brand flour. All of these work just as well.
I think the fresh flour has a better taste. It also contains all the nutrients and vitamins present in the brown rice so the bread is more nutritious.
I realize that not everyone will want to invest in a grain mill. If you can it is worth it in terms of nutrition and money savings. It pays for itself very quickly.
You can never go wrong investing in yourself by buying top quality equipment.
To make hamburger buns, hotdog buns, rolls and bread sticks.
Since the dough is very sticky and loose, you will need to use pans that will “form” the dough into these shapes.
Use muffin tins for rolls. Use “muffin top” pans or special hamburger bun pans and hotdog pans to form your dough into those shapes.Â
For bread sticks, you could use corn stick pans or place the dough in a large zip type bag. Cut a hole in the corner and squeeze the dough out into long sticks. Spray or brush with olive oil, sprinkle with Italian seasoning and parmesan cheese.
Let them rise for 15 to 20 minutes for soft bread sticks, right away for crisper sticks. Bake until golden brown.
For buns and rolls: Place the dough in the appropriate pan size. Let rise until doubled or the size you want and bake. Immediately after you remove them from the oven, brush with melted butter and sprinkle on dried onions, seasonings or leave plain.
