Gluten Free Cookies: Twin Dragon Almond

Yummy gluten free cookies with almond goodness in a little round package. These just melt in your mouth. Serve these instead of fortune cookies after dinner ( a whole lot easier to make too) and give everyone a cup of green tea. Or just treat yourself and forget about everybody else. Hah!

Oh, by the way, these are also dairy free. 

Gluten free Cookies: Twin Dragon Almond Cookies

3 cups gluten free flour blend
1 tsp. xanthan gum (omit if your flour blend has it already)
1 tsp. baking soda
1/2 tsp. salt
1/2 cup sliced almonds
1 cup granulated sugar
1 1/2 cups vegetable shortening
1/2 tsp. gluten free almond extract ( buy the good stuff now)
1/2 tsp. gluten free vanilla extract ( same here)
1 egg
1/8 cup water
Whole almonds or more sliced almonds for the topping

Preheat the oven to 350 degrees.

Whisk together the gluten free flour, xanthan gum (if using), baking soda and salt.

Place the 1/2 cup sliced almonds in a blender and whiz away until you get a nice nut “flour”. whisk this into your flour mix.

Cream the sugar and shortening in the bowl of an electric stand mixer. Add the extracts, the egg and the water. Slowly add the flour mixture ( no flour flurries in the kitchen please… pain to clean up) until combined.

Now the fun part. Scoop out 1″ balls of dough and place them on a parchment lined baking sheet. Artfully arrange one whole almond or three sliced almonds in the center of each gluten free cookie.
Then smoosh down with the palm of your hand to flatten them.

Bake for 12 to 15 minutes or until light brown around the edges. Cool for 5 minutes on the baking sheet and then transfer to wire racks to cool completely.

Makes 5 dozen yummy little morsels.
