Gluten Free Cookies: No Bake Recipe

Want something easy to make? Try these no-bake cookies. Simple but very pretty, these cookies will round out any dessert tray or buffet. Make them for hostess gifts or give these cute little balls in a pretty tin for a made-just-for-you gift.

Gluten Free No-Bake Date Cookies

1 cup sweet coconut flakes
1 cup light brown sugar, packed
1 cup chopped dates(buy them chopped, it’s quicker)
2 eggs, beat together to mix them up
1 tsp. gluten free vanilla extract
3 cups gluten free crisp rice cereal

Line a cookie sheet with parchment paper. Place the coconut in a shallow bowl so you can roll the cookie balls in it.

Use a large saucepan (big enough to hold the 3 cups of cereal), place the brown sugar, the dates and the eggs over medium heat and cook for about 10 minutes until it thickens. Make sure you stir like crazy to keep it from sticking. This is where a non-stick pan is handy.

take it off the heat and stir in the cereal. Shape with a small cookie scoop and plop into the coconut. Roll and set on the parchment paper. When you’re done rolling, place in the frig and let the cookies set up for about one hour.

Ok, let’s turn them into something else.

Change out the dates with dried blueberries and use gf almond extract.
Swap out the dates with finely chopped dried pineapple and or mango and use gf lime extract.

Use dried cranberries or cherries and use either the gf vanilla extract or a gf cherry extract or gf orange extract.

Let’s get to the heart of what every one want’s ….. chocolate! Go ahead and dip these in melted gluten free chocolate. Place them on a piece of parchment paper and sprinkle a tiny bit of finely diced dried fruit, coconut or more shaved chocolate. 

Let them set up completely. Package in little candy papers and nestle in a cute box.
