Gluten Free Cookies: Nutter Butter Recipe

Crunchy peanut butter cookies with a creamy peanut butter filling.

Before being diagnosed with celiac, I would devour these peanut butter filled cookies by the handful. Heaven!  I’ll let you in on a secret. I adore peanut butter. I’m one of those people who will pull the jar out of the frig, dip in a spoon and eat it right then and there.

These are as close as it gets to biting into the real thing. You can shape the dough into little peanuts if you want to make it look “authentic” or just make rounds. Depends on how fussy you want to get.

Gluten Free Nutter Butter Cookies

1/2 cup vegetable shortening (Spectrum Naturals is a good brand)

2/3 cup granulated sugar
1 egg
1/2 tsp. salt
3 Tbsp. creamy peanut butter
1/2 cup gluten free rolled oats (old fashioned kind not quick)
3/4 cup gluten free flour
1/4 cup tapioca flour (starch)
1/4 tsp. xanthan gum

For the filling:

1/2 cup creamy peanut butter
3/4 cup powdered sugar
1 Tbsp. crushed gluten free arrowroot cookies ( Mi-Del brand, used 5)

Preheat the oven to 325 degrees.

Cream the shortening and sugar in the bowl of a stand mixer and beat until creamy and fluffy about 3 minutes. Mix in the egg, salt and peanut butter and blend thoroughly.

Place the oats in a blender and whiz until it becomes flour. Pour into a medium sized bowl and add the gluten free flour, tapioca and xanthan gum. Whisk together.

Slowly add the flour mixture to the peanut butter until combined ( try to avoid a flour dust storm).

Shape the dough into 1″ rounds and flatten to 1/8″ thick. I used the lid off the can of non-stick spray. Worked great. Or shape the dough balls into peanut shapes to make it look “real”. You can even press the dough with the tines of a fork to get that cross hatch look on top.

Bake for 8 to 10 minutes until light brown on the edges. Transfer to wire racks to cool completely.

Place all the filling ingredients in a medium bowl and combine with an electric mixer. Place a teaspoon of filling on a cookie half. Spread it around with a knife and then plop another cookie on top to make a sandwich. 

Makes 2 dozen nutter butter sandwich cookies (just like the jingle – have another nutter butter peanut butter sandwich cookie).
