Homemade Caramel Corn

Just in time for Halloween.

Make this yummy caramel corn to snack on when you have everyone one over for a late night movie party.

Make lots! It will disappear quick!

Homemade Caramel Corn

Here’s what you need:
1 cup popcorn kernels
2 cups firmly packed dark brown sugar
1 cup butter
½ cup agave syrup
2 teaspoons salt
1 teaspoon ground cinnamon
1 teaspoon baking soda
Here’s how to make it:
Pop popcorn according to package directions. Throw away any “old maids” (unpopped kernels) and place the popped corn in a large rimmed cookie sheet or turkey roasting pan.

Preheat your oven to 250 degrees.

Place the brown sugar, butter, agave syrup, salt and cinnamon in a large non-stick saucepan.

Bring to a boil over medium-high heat, stirring constantly.

Cook the caramel for about 2 minutes. Take it off the heat, and stir in baking soda (this will make it  foam up …that’s why you need the LARGE saucepan so it won’t spill over).

Pour this over the popcorn, and stir quickly to coat before it cools down. Watch it, it’s hot!

Bake for 1 hour, stirring every 10 minutes. Remove from oven, and spread in a single layer on wax or parchment paper.

Let it cool completely and store it in an airtight container for up to 5 days, if it lasts that long. HA!
