Start with a gluten free mix and end up with tropical yumminess.
You’ll be all ready to party with this great recipe for gluten free lime cupcakes. These come together in a snap with a gluten free cake mix.
Gluten Free Lime Cupcakes
Cupcakes
1 box of your favorite gluten free yellow cake mix ( I used King Arthur Flour)
Ingredients needed to make cupcakes
Cupcake “Filling”:
1 4-serving sized box of vanilla instant pudding mix
1 1/2 cups whipping cream
1/4 cup Key lime juice
4 drops green food coloring(optional)
1 1/2 cups powdered sugar
Frosting:
1 can of gluten free vanilla frosting ( I used Betty Crocker brand)
1 Tbs. key lime juice
1/2 tsp. grated lime peel
1 lime for garnish ( optional)
Directions:
Make the filling first by placing the pudding mix and the whipped cream in a large bowl and whisk for 2 minutes. Let is sit for 3 minutes and then whisk in the lime juice and food coloring (optional). Whisk in the powdered sugar and then refrigerate while you make the cupcakes.
Make the gluten free cupcakes as directed on the box. Set them aside to cool.
To make the frosting, use a spoon and stir up the frosting in the can to loosen and fluff up a little. Then stir in the lime juice and peel. Place in a zip type bag, close and snip a hole in one of the corners. Set aside.
Now, take the filling out of the refrigerator. Cut each cupcake in half and spread with a tablespoon of filling. Or you can cut the top of the cupcake off and spread a tablespoon of filling on the cut side. Or you can spread the tablespoon of filling over the top of the cupcake.
Either way, use up the filling and then top your gluten free cupcakes with the frosting.
I added thin slices of lime to top them off. If you use fresh limes, make sure to add them right before you are ready to serve otherwise the limes will make the frosting runny.
If you need to take them somewhere, just bag up the lime slices and put them on at the last minute.
These have a refreshing lime taste. Just tooo good.
