St. Patrick’s Day Gluten Free Cake with Layers

In honor of St.Patrick’s day, everything will be green, including this gluten free cake with layers. 

I couldn’t resist a little Irish humor so here are some Irish “proverbs”.

You’ve got to do your own growing, no matter how tall your grandfather was.

The longest road out is the shortest road home.

The Irish are very fair people; they never speak well for one another.

A quarrel is like buttermilk: once it’s out of the churn, the more you shake it,

the more sour it grows.

God invented whiskey to keep the Irish from ruling the world.

Gluten Free St. Patrcick’s Day Layer Cake

A gluten free cake recipe
1 box of gluten free yellow cake mixIngredients to make the cake

1 ½ tsp. gluten free mint extract

Frosting and filling 

2 jars gluten free hot fudge topping8 oz container of Cool Whip

½ tsp. gluten free mint extract

9 drops of green food coloring (gf of course)

5 drops of yellow food coloring

(yes, you need both to get just the right color)

Prepare the cake mix as directed on the box and make sure to add the mint extract.

 

I baked mine in a jelly roll pan so I could cut them into squares and pile two on topof each other. You could bake this in a 9×13 pan and just frost the top and forget

about stacking, which would save time and hassle.

Once it’s baked, cool completely.

Now the fun part. Carefully spread the hot fudge topping on the cooled cake.

In a medium bowl, dump in the Cool Whip and add the mint extract, and food coloring.

Mix together gently. It will turn a very nice shade of green.

Spread over the top of the fudge. Pile on thick, go ahead, use it all up.
Then take a chocolate bar and shave bits of it on top using a vegetable peeler to sliceit off.

(If you want to layer like mine, just cut into squares. Place fudge filling in the middle and then topwith fudge filling and Cool whip frosting).

There you have it. A little bit o’Ireland to munch.
