Gluten Free Chocolate Candy

Make this in less time than it takes to get the coffee going.

I’m in a gluten free chocolate mood but don’t want to cook over a hot stove in this heat (remember I live in the southwest desert..it’s still 106 out). Looking, looking, looking…… ah ha! Found something that might work here.

This gluten free chocolate recipe uses my trusty old microwave. The companion that sits there day after day waiting to do something else besides warm up leftovers and cold coffee. Let’s give it something fun to do. Like make candy!

Microwave truffles

Gluten Free Chocolate: Microwave Chocolate Truffles

1/3 cup finely chopped nuts (pecans, walnuts, sunflower seeds, candied ginger.. ohhhh that       sounds good!)
8 squares (1 oz size) semisweet baking chocolate
1/4 cup butter (sorry has to be butter or it won’t taste right)
1/4 cup whipping cream
1/4 tsp. almond or vanilla extract

Equipment: Microwave, 2qt microwave safe bowl (glass works), electric hand mixer,spoon, 24 small foil candy cups(Wilton)

Put the foil candy cups on a cookie sheet. Spoon 1/2 tsp. of the nuts in the bottom of each one and set aside. You should have some nuts leftover to sprinkle on top later.

In the bowl, place the chocolate and butter. Microwave at 50% power for 1 1/2 minutes. Stir. If not completely melted zap for another 1/2 minute. Stir in the cream and extract. Beat with a hand mixer until just starting to thicken up. Immediately pour or spoon into your candy cups before it sets up on you. 

Top with the extra nuts and refrigerate until firm.
