Gluten Free Chocolate Wafer Cookie Recipe

 

The perfect gluten free substitute for chocolate wafer cookies. 

Gluten Free Chocolate Wafer Cookies

 
½ cup butter, softened
1 cup brown sugar, packed
½ cup unsweetened cocoa powder
2 TB milk or gluten free flavored coffee creamer
 2 tsp gluten free vanilla extract
½ tsp baking soda
2/3 cup gluten free flour blend
2/3 cup tapioca flour
1 tsp xanthan gum
Optional Coating:
1 ¼ cups semisweet chocolate chips
1 TB shortening
½ cup crushed peppermint candies

Dough must chill for 30 minutes.
In a large bowl, beat the butter until soft. Add the brown sugar, cocoa powder, milk, vanilla and baking soda. Add the next 3 ingredients to the butter and beat to combine well. Shape the cookie dough into a round, wrap in plastic wrap and refrigerate for 30 minutes.
Preheat the oven to 375 degrees.
Line two baking sheets with parchment paper. Divide the chilled dough in half. Roll out the dough to a ¼” thick using parchment paper on the bottom and plastic wrap on top.
Using a round or square cutter, cut out cookies and transfer to a baking sheet leaving 2” space between them. Bake 6-8 minutes. Cool for 1 minute on the sheet and then transfer to a wire rack to cool completely.
Fancy them up with this chocolate coating.
Melt the 1 ¼ cup chocolate chips with the shortening in a microwave proof bowl. Microwave for 30 seconds, stir and do it again until the chips are melted and the mixture is smooth.
Dip on side of the cooled cookies into the chocolate and then sprinkle with the crushed candies. Place on a parchment sheet to harden. Store in an airtight container. Makes 50 cookies.
These are a perfect replacement for any recipe that calls for Chocolate Wafer cookies. Make up a batch, freeze them, and then pull out to make yummy ice box cakes or fill and make delicious sandwich cookies.
