White Chocolate Cranberry Cookie Recipe
My son-in-law just loves these gluten free cookies. And he isn’t even gluten free. Either they’re really good or he’s just being nice. Probably some of both :).

Make someone happy-give them these cookies!
½ cup butter, softened
½ cup brown sugar, packed
1/3 cup sugar
1 egg
1 tsp gluten free vanilla extract
1 3/4 cup gluten free flour blend
1 tsp xanthan gum ( omit if flour blend has it already)
½ tsp salt
½ tsp baking soda
¾ cup dried cranberries
½ cup gluten free white chocolate chips
Preheat oven to 375 degrees.
In a large bowl, beat the butter and sugars together until combined, about 2 minutes. Add the egg and vanilla, mix. In another bowl combine the flour, xanthan gum, salt and baking soda, whisk together. Add the flour to the butter mixture and combine thoroughly. Add in the cranberries and chocolate chips, stir to combine.
Drop by tablespoonfuls onto parchment lined baking sheets. Bake for 8-10 minutes or until light brown. Cool on the sheet for 1 minute and then remove to a wire rack to cool completely. Store in an airtight container. Makes 2 dozen.
So crank up the oven, get out those cookie pans and start baking.
