Only two more days to go before you must be a’wearin’ the green. Below is a leprachaun puzzle and a recipe for St. Patrick’s Day gluten free cupcakes.
A leprechaun bought himself a jigsaw puzzle with 20 pieces. It took him a month to fit the pieces together correctly. He thought this was terrific, but his mate O’Reilly said, ‘What’s the big deal?’
The Leprechaun said, ‘Well it said on the box: 4 to 6 years.’
Shamrock Gluten Free Cupcakes
A gluten free cake recipe
1 box of gluten free cake mix (your choice)Ingredients to make the cake
Frosting and filling
8 oz container of Cool Whip½ tsp. gluten free mint extract9 drops of green food coloring (gf of course)
5 drops of yellow food coloring
(yes, you need both to get just the right color)
(you have these left over from before, right?)
Fun Shamrock Straws (I got mine at Target)
Preheat your oven. Get out the cupcake tins and line with cupcakepapers.
Mix up the cake mix as directed and make into cupcakes. Bake and allow to coolcompletely. Â You will need to peel them out of the papers.
In a medium bowl, dump in the Cool Whip and add the mint extract, and food coloring.Mix together gently. It will turn a very nice shade of green.
Place in a zip bag and cut off one corner. Â Cut your cupcakes in half. Pipe in the middleof your cupcakes. Put the cupcake top back on and pipe a nice swirl like in the photo.
Place in new cupcake papers so they look pretty. Now the straws…
Cut off about 3 to 4 inches off the bottom of the straws. Mine had honeycombShamrocks that you had to open up and stick together. Do this before you stickthem into your cupcakes. It’s a lot easier (I know…… don’t ask how….).
Poke them into your cupcakes and serve. Great for a school party.
This could be used for any kind of a party. Think mothers days with pretty flowers,4th of July with flags, back to school with cute apples…… you get it.
