Gluten free pancakes are one of the easiest things to make e. Try out this recipe and see if you don’t agree. I have included a few variations so you can wake up your sleepy heads with something new.
Gluten Free Pancakes Recipe
3 -3 1/2 cups of Gluten Free Self-Rising Flour Blend*
4 eggs
2 cups water
2 Tbsp gluten free vanilla extract
1 Tbsp honey
2/3 cup oil of your choice
Whip together the eggs, water and vanilla. add in the honey and then stir in the flour blend. Make sure there are no lumps. I know most recipes say to not stir completely, but I have done that and left lumps in. They don’t mix in when cooked. So, make sure to get your lumps out! Use a whisk for this.
Then stir in the oil.
Heat up your griddle or pan, pour out your batter to whatever size pancake you want and cook until some bubbles form on the top and the edges look dry. Flip and brown the other side. Done.
Hold in a 200 degree oven to keep warm, or just make everyone stand in a line and have you flip them on their plate when ready (hee, hee).
Serve with the usual suspects or be bold and have fruit with whipped cream!
*Note: the Gluten Free Self Rising Flour Blend contains powdered milk. You can make the mix without the powdered milk. Just remember to replace the 2 cups of water with 2 cups of rice milk or coconut milk to give it body.
On to the fun stuff!
Try making:
Southern Peach Pancakes : Add in 2 cups of finely chopped fresh peaches. Well I do declare, these are ever so tasty.
Apple Cinnamon Pancakes: Add in 1 1/2 cups finely chopped fresh apples and 1/2 to 1 tsp of cinnamon.
Banana Dash Pancakes: Pour out your pancake batter and quickly top with thin slices of ripe bananas.
Savory Corn Pancakes: Skip the vanilla. Add 2 cups of corn kernels and 1/4 cup of very finely diced red bell pepper. Serve with chili, or taco meat and just sour cream. Fresh corn kernels taste the best, but you can substitute frozen corn kernels that have been thawed and drained.
Don’t forget! You can make little Silver Dollar Pancakes by using only a tablespoon of batter and cooking quickly. These would also make good appetizers served with smoked meat and cheese, chutney, tuna and/or chicken salad.
Anything that you could put between two pieces of bread can usually be used on top of an appetizer.
Search your cookbook collection and see what other fun toppings you can come up with.
You can also freeze your pancakes after they have cooled. Place in zip type freezer bags between pieces of parchment paper or plastic wrap. That way you can take one or two out to thaw instead of the whole bag full.
Pancakes are a fun “bread” to make. Especially since they work so well with gluten free flours. And a great way to teach your kids how to cook Gluten Free.
