A wonderful side dish that is perfect for just the two of you. If you need more servings, just double or triple the quantities.
Dilly Peas with Almonds
Ingredients:
1 cup frozen peas
2 Tbsp. chopped onion
4 mushrooms, sliced Or 1/2 of a 4.5 oz. jar of sliced mushrooms, drained
1/2 tsp. butter or coconut oil
3/4 tsp. chopped fresh dill or 1/4 tsp. dried dill week
1/8 tsp. each salt and pepper
1 Tbsp. slivered or sliced almonds
Directions:
In a small saucepan, mix together the peas, onions and mushrooms. Just barely cover with water and bring to a boil. Reduce the heat to a simmer and cook for 4 to 5 minutes or until the peas and mushrooms are tender. Drain.
Immediately stir in the butter, dill and the salt and pepper. Sprinkle the almonds on top.
Serves 2
Quick and easy and simple enough to change. Mix up the herbs and the nuts for a different flavor combination.
