Low Carb Pumpkin Cupcake Bites
Okay all of you multi allergy sufferers out there. Is this a recipe for you.
No gluten, no eggs, no dairy. Just yummy pumpkin bites with a coconut whipped topping. We’re talking pumpkin pie here without all the unhealthy ingredients to go with it.
And ready in 30 minutes. Love these quicker bakes.
Here’s the ingredient list for you:

1 can pumpkin or 1 1/2 cups pumpkin puree

2 very ripe bananas

1/2 cup coconut sugar

1 1/2 tsp cinnamon

1/4 tsp ginger

1/4 tsp nutmeg

1/4 tsp sea salt

1 can full fat coconut milk
-
2 T maple syrup
-
1 tsp vanilla beans
